You’re looking for more than drawings. You need partners who understand how potato processing behaves at scale — where plans hold, where they don’t, and what it costs when they miss.
With experience across 25+ plants, 50+ production lines, and projects up to $350M worldwide, we help processors make the right decisions early — before they become expensive to fix.
The result is measurable performance: higher capacity, less waste, and safer operations that hold up long after startup.
While best known for our potato processing expertise, Projex also supports clients across the broader Frozen and Snack food manufacturing industries

We exist to reduce regret in large-scale potato processing projects.
Whether you’re planning a new fry or chip plant or improving an existing line, we help you make the right decisions early — so capacity, cost, and safety targets hold up once the plant is running.
Hi, I’m Mike DeLong.
While attending engineering school, I never imagined French Fries as a career. I studied engineering precisely to avoid making fries for life. Now 20 yrs later, my expertise is French Fries. I have spent the last two decades inside potato processing — learning how plants actually behave once things scale, and where projects tend to go wrong when decisions are made too late.
That hard-won experience shaped Projex Consultants into a firm focused on the decisions that matter before the cost of being wrong gets expensive. We support potato processors through complex capital projects by helping teams make better decisions earlier — across planning, execution, and commissioning.
The work is technical, but the stakes are practical: capacity, cost, safety, and long-term performance. My role is to help teams see the whole system early, so startups are cleaner and improvements stick.
